Traditional Sardinian cooking workshops

During your stay, you can take part in hands-on workshops dedicated to the preparation of some of Sardinia’s most beloved traditional specialities.

The focus is on doing: you’ll work the dough, follow each step and learn to make pane civraxiu and culurgiones by hand.

Every stage is guided, with a straightforward and welcoming approach designed to include everyone — even those with no prior experience.

How we make pane civraxiu

Pane civraxiu is a symbol of Sardinian tradition: its origins date back to the era of the Roman invasions, around 235 BC, and to this day it is still made using the ancient method that allowed it to keep for several days — a precious quality for the island’s pastoral communities.

In our workshop we use only sourdough starter and organic Cappelli wheat semolina, grown exclusively in Sardinia, in Tuili. Simple, carefully chosen ingredients, for a result that truly tastes like home.

The workshop follows a simple, structured process in which each stage plays a specific role. From preparation to baking, you’ll work through it step by step, actively involved at every moment.

Preparation

It all starts with the ingredients and working the dough. Each participant follows the initial steps, getting a feel for textures and proportions.

Leavening

The dough rests and transforms. This is an essential stage, where you observe timing and natural reactions up close.

 

Baking

The work takes shape in the oven. The final result is the product you made during the workshop — ready to be shared and tasted.

The magic of culurgiones, step by step

The workshop walks you through every stage of making culurgiones, following a simple, guided method that’s accessible to everyone.

From preparing the dough to sealing each piece by hand, every step is explained with care and experienced first-hand, allowing you to learn the technique through practice.

The aim is to bring you into each gesture and lead you, step by step, to the complete creation of the dish.

The culurgiones process

The preparation of culurgiones follows a precise sequence, where each stage requires attention and a careful touch. From the dough to the final seal, the workshop guides you step by step through the entire process.

Preparing the dough

The pasta is worked from simple ingredients until it reaches the right elastic consistency for shaping.

Rolling & filling

The dough is rolled out and filled, balancing the stuffing with the structure of the pasta.

Sealing by hand

Each culurgione is closed by hand following the traditional technique, with careful attention to the gesture and the shape.

Baking & seasoning

I culurgiones si cuociono in acqua bollente salata per 3-5 minuti, finché non vengono a galla. Si condiscono con un sugo di pomodoro semplice — aglio e pelati cotti una quindicina di minuti — e una generosa spolverata di pecorino grattugiato. Si mantecano velocemente in padella e sono pronti.

And at the end… we eat together

Every workshop ends with a small smurzu — as we say here: a convivial, all-Sardinian snack.
A tasting of local cheeses and cured meats, freshly baked pane civraxiu straight from the workshop, and a glass of red wine chosen from the island’s own labels.
The best way to round off an authentic experience, sitting together — just as it has always been done in Sardinia.

Sailing Trips Along the South-West Coast of Sardinia

In the south-west of Sardinia, aboard a Jeanneau Sun Odyssey 37, you’ll sail along the Rotta delle Miniere (Mining Route): spectacular cliffs, ancient mining structures perched on the rocky coastline, hidden coves and crystal-clear waters perfect for swimming. An experience that brings together sailing, nature and history, led by an expert skipper and a certified environmental guide.

How the Trip Works

Every day at sea is different from the last, but three things never change: a reliable boat, a route that surprises, and a sea that never stops taking your breath away.

The Boat

A Jeanneau Sun Odyssey 37, 11.4 metres long: spacious, comfortable and equipped with large sun decks and platforms for diving into the water.

The Route

Departing from the port of Portoscuso. Two possible itineraries: the Rotta delle Bilancelle along the mining coastline, or the Rotta dei Tonni heading to Capo Sandalo, the westernmost lighthouse in Italy.

On Board

Stops at anchor for swimming in crystal-clear waters, postcard-worthy scenery and the chance to encounter dolphins and seabirds. It’s not uncommon to find yourself lost for words.
